When carving our jack o lantern or simple making pumpkin puree for our fall stash of pumpkin treats we save the seeds, roast them and EAT!
A snack that is good for you. An explosion of valuable nutrients hidden inside the tiny germ in the seed case. High in antioxidants, high in fiber, omega-3 and omega-6 fatty acids, and antioxidants.
You can say it’s the healthiest part of the pumpkin!
Set them out to dry overnight or a few days.
When you’re ready to roast, toss them in a little olive oil or coconut oil and salt. Roast at 275° for 40 – 45 minutes.
That’s it! Enjoy!
It’s so yummy! The kids eat them like popcorn!

Pumpkin Spice Seeds – Add cinnamon, nutmeg & cloves
Spicy Adult Seeds – Toss in Siracha
Movie Theatre Style – Toss in Butter
Please be sure to cook them at low heat, which helps to protect the nutrients inside the seed. If we cook them at high heat we will cook out all the nutritional value.
