​Vacationing in Vermont, in February, means it’s COLD!  No better place to warm up then in the kitchen.  So the kids and I whipped up these Chocolate Almond Butter Bars to satisfy hungry tummies.

Although the bars are cold (must be kept in fridge), the ingredients do need to be warmed up and cooked together.  Oh, how good it felt to be near a warm stove!

This super simple recipe is filled with protein, healthy fats, anti-oxidants and a little bit of sugar from maple syrup, or honey. It’s everything you need to conquer a cold day playing outside in the snow.


​Here’s how we did it.

First, line an 8×8 baking dish with parchment paper.

Melt together chocolate, crunchy almond butter, coconut oil, vanilla extract and maple syrup. Layer mixture across the bottom of your baking dish and set in freezer for 15 to 20 minutes.


​Next, mix together, over low heat, the crunchy almond butter, coconut oil, vanilla and maple syrup until well combined and soft to spread.

Spread over the hardened chocolate mixture and store in fridge for one hour to cool and harden.  

​Slice into 1 inch squares and enjoy!

​I know everyone has their favorite nut butter, this recipe is simple enough and allows for substitutions with your favorite nut butter, use a peanut butter, cashew butter or any other favorite butter. 

Please be sure to check the ingredients in your nut butter first.  If any sugars or oils are added to the nuts it will change the flavor and consistency of the recipe.  For the best results ingredients should only list your nuts!


​Here’s the recipe:
Chocolate layer
1 Cup dark chocolate
½ Cup crunchy almond butter
¼ Cup coconut oil
2 Tbsp maple syrup
1 tsp. vanilla extract

‘Vanilla’ layer
1 Cup crunchy almond butter
¼ Cup coconut oil
1 Tbsp maple syrup
1 tsp. vanilla extract
Sprinkle of sea salt over the top
Handful of chopped almonds on the top make it sweet and crunchy!


​Maple syrup can be substituted for honey throughout the recipe.  Use equal amounts when substituting.  The sweeteners can also be left out.  The almond butter has a sweet taste that’s perfect without sweeteners.  Although, if using dark chocolate I do recommend sweetening the chocolate layer of these bars.
